Recipe; Marble chocolate crumble cake.


What you need;
 8oz (225g) butter, softened. (use a soya based spread if you cant have milk based spread)
8oz (225g) caster sugar.
8oz (225g) plain flour.
4 eggs
1tsp vanilla extract.
1tsp baking powder.
2floz (50ml) milk (Use soya or almond milk if you cant have cows milk)
1oz (25g) cocoa powder.

for the crumble topping;
41/2 oz (125g) plain flour
3oz (75g) butter
3oz (75g) caster sugar
3oz (75g) dark chocolate chips or roughly chopped chocolate bar.

9inch loose bottomed cake tin.

how to make ;

First off make the crumble topping by using your fingertips to rub together the flour, sugar and butter in a large bowl, mix in the chocolate pieces then put in the fridge while you make the cake.

Preheat the oven to 180degreesC and butter the sides and base of the tin. Cream the butter untill soft in a large bowl then add the sugar and beat till the mixture is light and fluffy.

whisk the eggs and vanilla extract together and gradually add the eggs to the butter and sugar mixture, beating as you go. to the mixture fold the flour and baking powder in carefully, add the milk and combine gently.

Split the mixture into two by putting half in a different bowl, to one bowl of cake mixture fold the cocoa powder in. then pour both cake mixtures into your tin and with a metal skewer place it into the mixture and move around slowly to create a marble effect (dont over mix though!). scatter the crumble mixture on the top of the cake mixture and bake for 50-60mins or until crumble is goldenand a skewer inserted into the centre of the cake comes out clean.

after 50-60mins remove from oven and alow to cool for 10mins. pop the cake out of the tin and allow to cool completely on a wire rack. then you can enjoy.

have it on its own or i recomend custard (alpro soya custard is just as good for those who cant have dairy!) its so good trust me!
